Calculate it :) You have a rough steps/mm value, you have a speed expectation, you know the pulley's diameter, so you can calculate RPM at maximum speed.

Looks like you can seal the openings on a stepper motor to make them dust, and waterproof. Unless there is some thing else that I'm not aware of that make a wet/dry stepper motor different.

The pololus are stepper driver on ramps and their outputs are for 2 coils only, so wont work. You would need to remove or not install a pololu driver, use the step/dir/en signals from that header, and...
