Yes, that would work. The maximum current you will be able to run the motor at before the driver overheats will be about 1A or perhaps 1.2A, so you will get up to about 40% to 50% of the rated torque.

Never connect or disconnect stepper motors wires to the driver with the power connected, and make sure the connections are secure before you apply power.
