Perhaps yes with the purpose to make the motor outputs to be always on. But the enable line has a good utility, that is when you give a print of 3-5 hours to the machine and you go out of the home, the microcontroller will have the motors disabled at the end of the print. Or, would disable Z in between layers when its not needed. Without that, motors would be always on and will consume current for nothing. And most probably, all firmwares around have enable outputs which you can use for this purpose. So on short yes perhaps you can do that - but imho its really not advisable.
